Cooking Ingredients
- (8) 8 oz filet mignons
- 6 cups veal stock
- 1/4 bunch fresh thyme
- 8 shallots thinly sliced
- 1 tablespoon olive oil
- 1 bottle red wine
- Chimichurri Cream Cheese
- 1/2 bunch fresh parsley
- 2 cloves garlic
- 1/2 tablespoon fresh oregano
- 1/2 tablespoon crushed red pepper
- 1/2 tablespoon ground chimayo pepper
- 1/4 cup olive oil
- 1 cup cream cheese
Cooking Instructions
In a large pot reduce the veal stock with thyme by 2/3 rds. In spearate pot saute' shallots in olive oil until carmelized ; add wine and reduce by 4/5ths. Strain stock and add to the shallots.
In a food processer puree' the aprsley, garlic, oregano, peppers , olive oil and cream cheese until smooth.
Cut a slit in each filet and fill with cream cheese mixture. Pre-heat oven to 425 degrees. Rub filets with vegetable oil . Brown on each side side and place in oven until meat reaches desired doneness 130 degrees internal temperature. 8 minutes cooking time.
