Coulette, Coulotte, Picanha, Top Butt Cap, by any name this steak is soft, sweet and a favorite among customers. This is a larger cut, about 2.5 pounds each, taken from the sirloin. It is versatile, a little leaner in its makeup, and can be served as medallions, steaks, or whole.

We offer our Coulette two ways:

  •   Packaged as a restaurant would receive. Two pieces per bag, untrimmed.
  •   As a single piece with the fat cap removed for those who prefer it trimmed. The single piece is only offered as an add-on to another order greater than $150. 

If you've ever been to one of our deck parties, you'll know that we love to grill them whole and slice to serve to a crowd.

Picanha Love

Seared intensely over direct heat and moved to indirect heat, occasionally checking internal temp. Removed at ~110 and covered with foil for 10 mins before SSS (slicing, salting & serving). DELICIOUS!
