Coulette, Coulotte, Picanha, Top Butt Cap, by any name this steak is soft, sweet and a favorite among customers. This is a larger cut, about 2.5 pounds each, taken from the sirloin. It is versatile, a little leaner in its makeup, and can be served as medallions, steaks, or whole.
We offer our Coulette two ways:
- Packaged as a restaurant would receive. Two pieces per bag, untrimmed.
- As a single piece with the fat cap removed for those who prefer it trimmed. The single piece is only offered as an add-on to another order greater than $150.
